Chinese leaf cabbage, daikon, carrot, seaweed, ginger, chilli, shitake and garlic ferment. A vegan take on a korean classic. In our most popular ferment, we leave out the fishsauce but add two types of seaweed and shitake mushroom to give it that distinct kimchi umame. Made from local ingredients whenever possible.
